These by far are the most deliciously dense and satiating pancakes you will ever eat. They take under 10 minutes to make and don’t require any special ingredients to make them. You most likely will have all the ingredients in your pantry.  

Whenever I eat traditional pancakes, I’m never able to finish them because I find them to be heavy and doughy. I accidentally kinda created this recipe almost 15 years ago when my younger son was 12 months old. He refused to eat oatmeal porridge, every morning when I tried to offer him some. So one morning out of frustration, I threw in some oats, a banana, an egg, some milk and pure vanilla essence and blended it all together and made them into tiny pancakes for my son. I placed one in his favourite bowl and handed it to him in his highchair, while I went about packing lunch for my older son who was in kindergarten then. I very quickly heard my 12 month old  say “momo”.  I was delighted to hear his sweet voice ask for more. He was a fussy eater and this was music to my ears. I gave him 2 more and he ate them both 🙂 Proud mama moment, and so with that pride I created another batch of oatmeal pancakes in my blender and made 8 more pancakes. This time my oldest son and husband gobbled them up, as if they were starving. I didn’t even get to taste one 🙁 

So for the third time that morning, I blended and made more oatmeal pancakes and finally sat down to taste them – WOW! I was impressed with my accidental creation born out of frustration.  I didn’t even make a berry sauce like I do in the video below. We ate it straight up plain. Just pancakes. Not even maple syrup. Ain’t got time to make fresh berry sauce, when you have toddlers. But they were sweet enough from the bananas. This meant I had less clean-up with my 12 month old and I could pack it easily in my older sons lunch box. This was an absolute win for me all round. I still remember that day very fondly even 15 years later. Till this day both my teenagers love these pancakes and love when I make them, even though they both have mastered how to make them on their own. 

The bananas make the pancakes, moist and sweet. Blending in the Vitamix makes the pancakes a really nice consistency. No need to add baking powder or baking soda – Just 5 ingredients, use any oats you have. If you have a high powered blender like the Vitamix then steel cut oats are the best choice. If not rolled oats is good as well. You will be a superstar for whomever you’re making them for or a superstar for yourself -which is even better;) Most importantly, they take under 10 minutes make and are great by the way even for dinner or as a snack.

This recipe is now a family favourite, even after almost 15 years!! I’ve made it for numerous friends, when we have family brunches or guests over, and they are loved by all. When I share my recipe with friends and family and they try it, I always get raving reviews about how simple yet tasty and satisfying these pancakes are.

The secret here is to use very ripe bananas, good quality oats (I use sprouted oats or steel cut) and blend for just the right amount of time ( 30 seconds) and you will have the most delicious pancakes.

Vitamix Pancakes: Easiest Pancake Recipe

These pancakes are naturally gluten free, flour free, no added sugar, plus if you don't eat eggs swap them with 1 tbsp of chia seeds to make it vegan.
I even made a fresh berry sauce to go with it and the entire recipe – pancakes and home-made sauce took me under 10 minutes to make from scratch. You don't have to make a fresh berry sauce, you can top with almond butter and maple syrup if you like, or whatever you fancy and have available in your kitchen.
There is no baking soda or baking powder or any ingredients to make it fluffy, they become fluffy just from using the blender. Give it a try and see for yourself how easy, tasty and satisfying this recipe is.
This recipe makes 4 pancakes and is very filling. If you are making for your family, double or thriple the recipe. Children tend to love this recipe. I know mine do. They are not so fond of oatmeal but love these pancakes, even thought they are made with Oats.

Equipment

  • 1 Vitamix Blender

Ingredients
  

  • 1 cup Oats (sprouted, rolled, quick or steel cut oats)
  • 1 egg (can swap egg with 1 tbsp Chia seeds)
  • 1 banana
  • 1/2 cup almond milk (unsweetened)
  • 1 tsp vanilla essence (pure)

Instructions
 

  • Add all of the above ingredients in the order mentioned and blend. Start on low and increase to high for about 30 seconds
  • Heat a cast iron pan, when hot, use coconut butter or any butter of your choice to grease the plan. Turn down the heat to medium low and pour your pancake batter into the pan. When you see a few air bubbles on each pancake, flip them and cook for a minute or so
  • Keep warm in the oven while you make your blackberry sauce (If you are making it)
  • Blackberry Sauce: I use 1/4 cup blackberries, 2 tbsp water, give it a quick boil, add, 1 tsp maple syrup and a generous pinch of cinnamon powder. Pour on top of pancakes and enjoy
