This is a delicious green smoothie made in the Vitamix blender. It’s creamy and rich and tastes delicious as an appetizer to serve to guests instead of a green salad. The combination of frozen pineapple and cucumber combined with fresh avocado and spinach makes this smoothie thick and creamy that can be eaten with a spoon.
If you want to drink this as a smoothie, add more almond milk or water to make it slightly thinner.

This is delicious smoothie for when you are hungry and want a satisfing and filling drink. The cashewnuts and avacado are good fats and keep you satisfied and full for a long time. The pineapple gives the smoothie just the right amount of sweetness and the cucumber combined with the spinach makes this smoothie healthy.This is a great breakfast or lunch smoothie. Sometimes, I will make it for guests and serve smaller portions in bowls as an appetizer. Whenever I make this smoothie, everyone loves it including my teenage boys, who are somtimes picky eaters :(
2cupsSpinach(baby spinach is more tender, that's what I use)
1/2ripeavacado
1/2cupfrozen pineapple
1/4cupfrozen cucumber
1/4cupraw cashews
1cupunsweetened almond milk
Instructions
Add all the ingredients to the Vitamix container. Select Variable 1 and turn on machine, slowly increase to its highest speed (variable 10) and blend for 45 seconds.
Pour into glasses and enjoy, or pour into appertizer bowls and serve. You can also store in a bottle with a lid for up to 3 days and enjoy when you want. However, smoothies taste best when consumed fresh. The colour of your smoothie will change and may taste different when stored. Nevertless it is still good to consume and won't go bad if consumed within 3 days.
Tips: Always add liquids closest to the blades, then soft items, then hard or frozen items. Loading your Vitamix this way – with liquids on the bottom avoids air pockets from forming around the blades. The weight of the frozen items on top helps to push the other ingredients into blades for a seamless blend.
