Here is an easy, delicious pie crust that requires no cooking. All you do, is blend in food processor, press down into a pie dish and you have a crunchy, nutty pie crust to fill with whatever you like. You can also make breakfast/snacking energy balls from the left over pie crumble. I don't like a very thick crust, so I use 3/4 of the pie crumble to form into a pie crust and the remaining I role into energy bite size balls. You can also double this recipe and use half of the crumble to form into a pie crust and half to role into energy balls. You will get quite a few energy balls if you double the recipe. Over 24 or so!

Equipment
1 Vitamix Food processor or Vitamix Blender
Ingredients
1cup unsweetened dried mango
1cup pitted dates
1cup raw almonds
1cup raw cashew nuts
1/4cup flax meal
4tbspcoconut oil(add more if you feel your crumble is not coming together - this will depend on how dry your mangoes and dates are)
Instructions
Start by chopping in the food processor the mangoes and dates, then add in the almonds, cashew nuts, flax meal and processor till all ingredients is broken down into tiny bits that resemble tropical sand. Finally add in the coconut oil. and process for another 30 to 45 seconds. Your pie crumble will come together like fine wet sand on a beach, but should not be a sticky ball, it will still be a bit crumbly. If it's extremely sticky add a bit more flax meal.
Turn your crumble into a pie dish and press down firmly. Cover and chill in the fridge while you prepare your pie filling. Use my yogurt cheese cake filling if you like.
If you have extra pie crumble, role into bite size energy balls to eat as a snack or over morning porridge.
