Fresh Plum and Coconut Cake

Nothing like getting a bag full of fresh plums from your friends garden. Or picking your own summer plums or going to a local market and buying directly from the farmer. Either way, I received a large bag of plums from a friend and placed in a nice pottery dish on the kitchen counter. My teenagers will eat fruit when they see it in front of them, that's what my intention was when I strategically placed the bowl full of fresh ripe plums from my friends garden on the kitchen counter.

My younger son loves to bake, when he saw the bowl of fresh plums, he decided to bake a fresh plum cake. He had already started on the cake when I walked in from finishing a yoga class, it smelt so good so I hung around and watched him and helped a bit and Voilà  this is how we created this unique and moist plum cake. We are calling it a French plum cake, because it tastes like a cake we had when travelling through France.

Ingredients

  • 5 cups unbleached flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cardamom
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted coconut butter or butter
  • 1 cup raw cane sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup plant based milk or cows milk
  • 8 fresh ripe plums pitted & sliced

Instructions

  1. Preheat oven to 350°F

  2. Grease a 9-inch springform pan

  3. In a large bowl, whisk together the flour, baking powder, cinnamon, cardamom, salt and nutmeg

  4. In a separate bowl, cream 1/2 cup butter and 1 cup of the sugar until pale and fluffy, about 4 minutes. Add the vanilla egg and vanilla and beat on low speed until well combined. Gradually add the flour mixture, alternating with the milk, and beat on low speed until smooth - the batter will be quite thick

  5. Transfer the batter to the prepared pan and smooth the top with a spatula

  6. Arrange the plums on top, skin side up

  7. Sprinkle 1 tablespoons of cane sugar over the plums

  8. Bake for 60 to 70 minutes, until golden on top and set in the center

  10. Let the cake cool on a rack completely. Slice and serve on a warm summer evening with a delicious wine. You can also add ice cream or whipped cream if you’d like it as a dessert
