Don't let the long list of ingredients discouraged you from making this easy sauce. It's so worth making and storing in the fridge to use on anything you like and when you are in a rush. It is a raw marinating sauce that has some heat to it. If you don't like it spicy, the only ingredient you need to cut back on is the chillies. You can use this sauce as a base for stir fried noodles, in soups, over vegetables and even to marinate your meats and fish/seafood, before baking, pan frying, steaming and so on.You can purchase all the spices at your local grocery store or at an Indian or Mexican grocery store. You probably might have some ingredients in your pantry, already. Once you have all the ingredients, all you do is blend and store in a bottle to use over anything you like. It will stay good for up to a month in the fridge.

Equipment
1 Vitamix or a high powered blender
Ingredients
7dried red chilies(remove the stalk)
2dried smoked brown chilies(chipotle will work)
10dried Kashmiri chilies(these are not spicy, they mainly add flavour and colour)
4cloves garlic(large cloves)
2sundried tomatoes(large pieces, dried or soaked in oil can be used)
1tbspcumin seeds
1tsp caraway seeds(omit if you don't have or use fennel seeds)
1tsp coriander seeds(omit if you don't like the taste of coriander)
1tbspapple cider vinegar
2tbsp lemon juice(fresh not bottled)
1tsp sea salt(add more if you like, can also add later)
1/4cupavacado oil (can also use olive oil, I sometimes use more oil if the paste is very dry. Depending on how dry the chilies are, will determine if you need more oil)
Instructions
Add all the above ingredients to a high powered blender cup, like the small blending cup of the Vitamix. Blend on high till well combined and the ingredients is ground into a fine paste
Transfer to a bottle and store in the fridge for upto a month
