Vanilla coconut green smoothie

Ingredients
Vanilla coconut layer:
- 1 frozen banana
- 1/2 cup light coconut milk
- 1 tbsp chia seeds optional
- 1 tsp pure vanilla extract
Mint and Spinach layer:
- 1 & 1/2 cups baby spinach
- 1 frozen banana
- 10-15 fresh mint leaves optional
- 1/4 cup coconut milk
- 1/4 cup water
Instructions

Place the Vanilla Coconut Layer ingredients into a high-speed blender and blend until smooth and creamy, pour into your glass and keep aside.

Place the Mint and Spinach layer ingredients into a high-speed blender and blend until smooth. Pour this smoothie over the coconut layer and enjoy!
Recipe Notes
You donโt have to add 1/4 cup water in the green smoothie, I wanted my green smoothie thinner than the vanilla coconut layer, so I added water.
Top with mint leaves.
I make my own coconut milk, however, you can buy light tinned coconut milk.

I love fresh, local strawberries mainly for its characteristic aroma, bright red color, juicy texture, and sweetness. However, I used frozen strawberries and blueberries in this recipe as I like to eat my berries raw rather than blend them into a smoothies.
However, sometimes frozen berries tend not to be as sweet as fresh berries and your smoothie can become a bit tart, this is what happened to mine today. I resolved this by adding a banana👌🏽
Berry green smoothie
- 1/2 cup frozen strawberries
- 1/4 cup frozen blueberries
- 2.5 cups baby spinach
- 1/2 lemon
- 1/2 inch ginger
- 1/2 cup water
- A few fresh mint leaves
- 1 ripe banana (optional)

Place all ingredients into a high-speed blender and blend until smooth and creamy. Enjoy!
Add berries and a few mint leave on top.
